Italian Olive Salad New Orleans Style
Ingredients
  • 2 c fresh cauliflower
  • 2 c diced fresh carrots
  • ¼ c water
  • 2 c green pimento stuffed olives
  • 2 c pitted black olives
  • 2 c sliced celery
  • 1 c diced sweet peppers
  • 2 T chopped pepperoncini
  • ½ c chopped onions
  • 2 T capers
  • 6 cloves garlic
  • 1 c vegetable oil
  • 1 c olive oil
  • ½ c vinegar
  • ¼ c snipped fresh parsley
  • ¼ C snipped fresh basil
  • 2 T snipped fresh oregano
  • 1 T salt
Steps
  1. Combine cauliflower, carrots, and water in a 2 quart glass container. Microwave 4 to 5 minutes or until vegetables are tender crisp
  2. drain well add remaining ingredients.
  3. Mix well use olive salad as a dressing for sandwiches green salad or pasta salad.
Notes
  • “New Orleans just wouldn’t be the same if olive salad had never been spooned over salami and cheese on a round Italian loaf. There are many imitations of olive salad for a muffaletta, but a true Louisiana recipe can be easily recognized from an imitation. The list of ingredients is longer than the directions. This is a true Louisiana recipe. Olive salad is served cold, but the microwave is used to cook cauliflower and carrots. The remaining ingredients are added just as they come from the grocery. Pick olives with a strong clear flavor that will lend the best flavor to the olive salad.”
