Thai-Inspired Grilled Coconut Chicken Skewers
Ingredients

  • 2 pounds boneless skinless chicken breasts, thighs, or combination of both
  • ¼ cup of cooking oil
  • ½ a lime, both zest and juice
  • 2 teaspoons Thai red curry paste
  • 2 tablespoons brown sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon soy sauce
  • ½ teaspoon red pepper flakes
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon sesame seeds
  • ¼ teaspoon sesame oil
  • 1 teaspoon imitation coconut, optional, but delicious!

  • ½ cup water
  • 2 tablespoons unsalted butter
  • ⅓ cup coconut milk fat, reserved from the chicken marinade
  • ½ cup peanut butter
  • 2 teaspoons Thai red curry paste
  • Juice from ½ a lime
  • 3 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon sesame oil
