Crock Pot Balsamic Chicken

Ingredients
- 4 to 6 boneless, skinless, chicken breasts
- 2 14.5 oz can diced tomatoes
- 1 onion thinly sliced (Not chopped)
- 4 garlic cloves
- ½ cup balsamic vinegar
- 2 tblsp olive oil
- 1 tsp each: dried oregano,basil, and rosemary
- ½ tsp thyme
- ground black pepper and salt to taste
Steps
- Pour the olive oil on bottom of crock pot
- place in chicken breasts, salt and pepper each breast
- put sliced onion on top of chicken
- sprinkle the herbs and garlic cloves on top
- pour in vinegar and top with tomatoes
- Cook on high 4 hours, 6 hours on low; shred chicken and combine with tomato and onion mixture; serve over angel hair pasta or whatever your family's favorite is. Top with Parmesan cheese.
Notes
- Chicken thighs work as well and have a bit more flavor. I use a mandolin to slice the onion super thin. I subsititute an Italian herb mix for all the spices and then eyeball a handful to keep it simple. Leftovers are excellent and freeze well.
