Ingredients
  • Thought I’d share a picture of my absolute favorite WW inspired meal.
  • Cooked Shredded chicken (recipe called for 10 ounces but I always do about a pound)
  • 2 cans of low sodium chicken broth (or 3
  • Cups if you have a carton)
  • 1 can of pure pumpkin purée
  • 1 can green enchilada sauce
  • 1 cup frozen sweet corn
  • 1 cup (or more if you’d like) of chopped celery
  • 1 can of black beans
  • It also calls for onion but I don’t like them
  • I also decided to add black beans to increase the protein and fiber content.
  • I found you can throw everything into a crockpot and cook on low.
  • It ends up being <1 point per serving.
  • More if you add cheese or tortilla strips but super filling as is.
