Slow-Cooker Spicy Upside Down Pineapple Chicken
Juicy, spicy and finger licking good. This spicy upside down pineapple chicken makes for a delicious meal, with only 15 minutes preparation to get it into the slow-cooker.
Ingredients
  • 1 small pineapple (900g)
  • 1 medium onion (150g), chopped coarsely
  • 2 cloves garlic, chopped
  • 2 tbsps grated ginger
  • 2 long green chillies, chopped coarsely
  • 1 stalk lemongrass, white part only,
  • ¼ cup chopped coriander roots and stems
  • 2 tsps ground coriander
  • ¼ cup (60ml) lime juice
  • 2 tbsps light soy sauce
  • 2 kg whole chicken, butterflied
  • 1½ cups (300g) jasmine rice, rinsed
  • Olive oil cooking spray
  • Coriander leaves, to serve
