  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 2 cups cubed or shredded Cheddar cheese
  • Cayenne pepper to taste
  • ¼ teaspoon freshly grated nutmeg
  • 2 tablespoons grated Parmesan cheese
