Ingredients
  • 1.5 tablespoons olive oil
  • 1 medium onion, finely diced
  • ½ cup diced celery (about 1 large stalk/rib)
  • 1 cup diced red or green pepper (about 1 bell pepper)
  • 3 oz / 90 g streaky bacon, diced
  • 3 cloves garlic, finely diced
  • 0.5 lb / 250 g ground beef (we used 95% meat, 5% fat)
  • 1.25 cups dry Basmati or Jasmine rice, rinsed really well
  • 2 tablespoons Cajun spice mix such as this (or see notes below)
  • 1 tablespoon Worcestershire sauce or A1 sauce
  • 350 ml vegetable or chicken stock
  • subheading: Garnishes:
  • A handful of parsley, chopped
  •  
  • 1 to 2 scallions, chopped
  • Fried shallots like these (optional but adds a lovely flavor and texture)
