Ingredients
- Stew beef (1 to 3lbs)
- 8oz Baby bella mushrooms quartered
- 1 can cream of mushroom
- 1 pkt onion soup mix
- 2 cups red wine (Burgundy)
- Tbsp cornstarch
- Tbsp water
- Salt and pepper
- Mashed potatoes (i made separately)
Steps
- I very rarely cook with cream soups and mostly cook from scratch but forever my family has made a short cut beef burgundy recipe that uses cream of mushroom and onion soup mix and cooks covered in the oven for several hours at a low temperature. Tonight i adapted it to the ip. I was cooking for one so i used 1lb stew beef but this could be adapted to up to 3lbs without changing the other ingredient amounts.
- I seasoned the meat with salt and pepper. browned the beef on sauté. Deglazed with about ¼ cup of the red wine. Scraped really well. Added the rest of the wine, the mushrooms and onion soup packet and stirred. I poured the cream of mushroom on top and DID NOT STIR. I set manual for 26 minutes and did a qr. i mixed the cornstarch and water together. Set the ip to sauté again and brought to a boil. Stirred in the cornstarch slurry and cooked for one minute. Served over my mashed potatoes.
