Roasted Eggplant in Mafé Peanut Sauce
Ingredients
  • 2 large eggplants (1½ to 2 pounds each)
  • ¼ cup extra-virgin olive oil
  • 1 tsp. fine sea salt
  • ½ tsp. freshly ground black pepper

  • ½ cup crushed roasted peanuts, for serving
