Chipotle Chicken Chowder {Perfect Level of Spicy!}
Ingredients
  • 2 tablespoons butter
  • ½ of a yellow onion - diced
  • ½ of a red pepper - diced
  • 4 cloves garlic - minced
  • 1 teaspoon salt
  • ½ tsp black pepper
  • 1 tsp cumin
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme
  • 2 Tbsp all-purpose flour
  • 1 ½ cups whole milk or half & half
  • 4 cups (1) 32 ounces box chicken broth
  • 1 chipotle chile in adobo - seeded and minced
  • 2 tsp adobo sauce - from chipotle chilles
  • ½ (4 oz) can Hatch chilies
  • ½ (14.5 oz) can fire roasted diced tomatoes

  • 5 medium sized red potatoes - rinsed, peeled (optional) and cubed into 1" chunks
  • 2 cups corn - fresh or frozen
  • 2 cups cooked, diced chicken
  • 1 cup medium-sharp cheddar cheese - grated
