Barbecued lime chicken skewers with green chilli yoghurt

Ingredients
  • 1 tbsp lime rind, finely grated
  • ⅓ cup lime juice
  • 1 long green chilli, seeded, finely chopped
  • 2 garlic cloves, crushed 2cm piece fresh ginger, peeled, finely grated
  • ¼ cup soy sauce
  • ¼ cup light olive oil
  • 2 tbsp fresh coriander leaves, chopped
  • 600g chicken thigh fillets, trimmed, cut into 2cm pieces
  • Fresh mint sprigs, to serve
  • subheading: Green chilli yoghurt:
  • 1 long green chilli, seeded, chopped
  • ¼ cup fresh coriander leaves
  • ¾ cup thick Greek-style yoghurt
  • ¼ cup Fountain Thick Mint Sauce
