  • 1 cup chopped cucumbers I like to use the mini cucumbers and slice them in rounds
  • ½ cup chopped red onion
  • ⅓ to ½ cup chopped fresh parsley
  • 6 oz crumbled feta cheese
  • subheading: Honey lemon vinaigrette:
  • ½ cup extra virgin olive oil
  • 1 large clove garlic pressed, grated, or very finely minced
  • 4 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • ½ tsp kosher salt
  • ½ tsp black pepper
