Viki Thondley (Mind Body Food) healthy chocolate cake
Ingredients
  • ½ cup coconut flour
  • ½ cup raw cacao powder
  • ½ tsp salt
  • ½ tsp bicarb soda
  • 1 c coconut sugar
  • 1 tbsp mesquite powder (opt)
  • ½ cup coconut oil
  • 6 eggs
Steps
  1. Preheat oven 180c. Line bottom of spring form tin and grease sides.
  2. Combine coconut flour, cacao, salt, bicarb, sugar.
  3. Whisk eggs and coconut oil together.
  4. Mix into dry ingredients until well combined.
  5. Pour into spring form tin and bake 30 to 35m or until cooked.
  6. Cool 5 minutes then separate from tin via knife/spatula and remove to cool.
