Slow Cooker Chicken and Root Vegetables
Ingredients
  • 4 to 6 bone-in chicken thighs (or use boneless if preferred)
  • 4 medium carrots, peeled and cut into chunks
  • 3 large potatoes (Yukon gold or russet), cut into chunks
  • 2 medium sweet potato, peeled and cut into chunks
  • 1 medium onion, quartered (optional)
  • 2 to 3 cloves garlic, minced (optional, for those who tolerate it)
  • 2 cups low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme (or 2 tsp fresh)
  • 1 tsp dried rosemary (or 2 tsp fresh)
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper (optional, for seasoning)
  • Optional garnish: Fresh parsley, chopped
