Creamy Tuscan Chicken (Ready in 25 Minutes!)

  • ½ teaspoon ground black pepper
  • ¼ cup all purpose flour or GF flour
  • 1 tablespoon olive oil not extra virgin
  • 1 tablespoon butter

  • ½ cup sundried tomatoes chopped, Note 3
  • 4 cloves garlic minced
  • ¼ cup water or chicken stock or dry white wine
  • 1 cup heavy cream this is called double cream in the UK
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ½ cup parmesan cheese freshly grated
  • Salt and pepper to taste
  • 3 cups baby spinach leaves fresh, not frozen
