Irish Soda Bread
makes 1 loaf
Ingredients
  • 1 ½ c flour
  • 1c whole wheat flour
  • 1 tsp baking soda
  • ¼ c currants(or raisins)
  • 1 ¼ to 1 ½ c buttermilk
  • ½ tsp. salt
  • 2 tsp cinnamon (optional)
Steps
  1. Combine flours, baking soda, cinnamon and salt in lg mixing bowl.  Stir in currants.
  2. Add 1 ¼ c buttermilk, just till dry ingredients are moistened.  (add more buttermilk, if needed, to make a soft dough)
  3. Turn dough onto lightly floured surface.  Knead gently one minute.  Shape into ball.
  4. Place in greased baking dish. Pat into 8-inch circle.  With sharp knife, cut ½ inch deep ‘v’ in top of dough.
  5. Bake in preheated 375 oven until golden, 30 to 35 minutes.
  6. Transfer to wire rack and brush with 1 Tbl. melted butter.
Notes
  • Serve hot or at room temp with butter and jam.
