Irish Soda Bread

Ingredients
- 1 ½ c flour
- 1c whole wheat flour
- 1 tsp baking soda
- ¼ c currants(or raisins)
- 1 ¼ to 1 ½ c buttermilk
- ½ tsp. salt
- 2 tsp cinnamon (optional)
Steps
- Combine flours, baking soda, cinnamon and salt in lg mixing bowl. Stir in currants.
- Add 1 ¼ c buttermilk, just till dry ingredients are moistened. (add more buttermilk, if needed, to make a soft dough)
- Turn dough onto lightly floured surface. Knead gently one minute. Shape into ball.
- Place in greased baking dish. Pat into 8-inch circle. With sharp knife, cut ½ inch deep ‘v’ in top of dough.
- Bake in preheated 375 oven until golden, 30 to 35 minutes.
- Transfer to wire rack and brush with 1 Tbl. melted butter.
Notes
- Serve hot or at room temp with butter and jam.
