Southwest Quinoa Taco Salad

  • 3 cups vegetable broth
  • 1 can (15 oz) black beans see note #1
  • ¼ cup chopped cilantro from ~½ bunch
  • juice of one lime plus more for serving

  • romaine lettuce for serving
  • 1 cup frozen sweet corn thawed
  • 1 medium bell pepper diced
  • ½ medium red onion diced
  • salsa for topping
  • avocado for topping
