Vegetable Pot Pie Soup
Ingredients
  • 4 russet potatoes (peeled and cubed)
  • 3 carrots (peeled and cubed)
  • 1 yellow onion (chopped)
  • 2 c vegetable broth
  • 2T Spike Seasoning
  • ½ c cashews (soaked in hot water for 30 min)
  • 1 c plant based or soy milk
  • 1 can of cannellini beans
  • 2 c frozen peas
Steps
  1. Put potatoes in broth and bring to a boil.
  2. Add carrots and onion and Simmer for 10 minutes.
  3. Add seasoning and simmer another 15 minutes.
  4. Add soaked cashews and beans with almond milk and blend 1 minute in blender. Add to soup.
  5. Add frozen peas and cook another 5 minutes
