Oaty Ginger Crunch
Ingredients
  • subheading: Base:
  • 2 tbsp Honey
  • 150g Coconut Oil
  • 1 tbsp Crystallised Ginger Finely chopped
  • 1 C Organic Rolled Oats
  • ½ C Almonds Roasted and chopped
  • ½ C Desiccated Coconut
  •  
  • subheading: Topping:
  • 100g Honey
  • 4 tsp Ground Ginger
  • 5 tbsp Honey
  • 2 C Coconut Flour
  • 3 Tbsp chopped Pistachios to decorate
Steps
  1. Pre-heat oven to 170c. Grease and line a tin 21cm x 27cm.
  2. Base: Melt the honey, coconut oil and Ginger in a saucepan. Add the rest of the ingredients, stir well and press into prepared tin. Bake for 20 mins.
  3. Topping: Melt all ingredients in a saucepan, beat well and pour over cooked base. Top with chopped Pistachios. Set in fridge before cutting.
