Vegan Gluten Free Pumpkin Spice Muffins
Ingredients
  • 2 tbsp ground flax seeds
  • 6 tbsp water
  • 1 ¾ cups gluten free flour blend OR all-purpose flour (see notes below)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ½ cup melted coconut oil (plus extra for greasing muffin tin)
  • 1 tsp vanilla
  • ¾ cup coconut sugar
  • 1 cup unsweetened pumpkin puree (see note below)
  • ¾ cup chocolate chips OR raisins OR nuts (chopped walnuts or pecans work well)
