  • ½ cup (112ml) water
  • ¾ cup (180ml) whole milk, room temperature
  • 2 large eggs, plus 1 yolk, room temperature
  • 6 tablespoons (85g) butter, softened, plus more for greasing
  • 1 tablespoon (10g) instant yeast
  • ¼ cup (60g) brown sugar
  • 1 ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon freshly ground nutmeg
  • ⅛ teaspoon ground cloves
  • 1 ½ teaspoons (7g) salt
  • 4 ¼ cups (570g) bread flour
  • ¼ cup (50g) candied citrus peel, minced
  • Egg wash (1 egg yolk mixed with a splash of milk or cream)

  • 2 tablespoons (28ml) water
  • ¼ cup (60ml) rum
  • 5 strips of orange peel
  • ¼ cup (50g) granulated sugar

  • ½ cup (65g) bread flour
  • 4 tablespoons (56ml) water
  • 1 tablespoon (14g) unsalted butter, softened
  • Cultured butter, to serve
  • Flaky salt, to serve
