My mother-in-law cut this recipe out of the January 11, 1981, edition of "Family Weekly."

Ingredients
  • 6 medium green peppers
  • ½ lb. Velveeta
  • 10 oz. frozen, chopped broccoli
  • 1 c. chopped tomato
  • ¾ c. cooked rice
  • ¼ c. chopped onion
  • ⅛ tsp. salt
  • 1 c. bread cubes
  • ¼ c. butter
  • water
Steps
  1. Thaw & drain broccoli.
  2. Preheat oven to 350° F.
  3. Cube cheese.
  4. Melt butter.
  5. Remove tops & seeds from peppers, parboil for 5-mins., & drain.
  6. Mix together broccoli, tomato, rice, onion, salt, & all but ½-c. of cheese. Spoon into peppers.
  7. Toss bread cubes with butter; sprinkle on top of peppers.
  8. Place peppers in baking dish & bake for 30-mins.
  9. Sprinkle remaining cheese on top of peppers. Continue baking till cheese is melted.
