My mother-in-law cut this recipe out of the January 11, 1981, edition of "Family Weekly."

Ingredients
- 6 medium green peppers
- ½ lb. Velveeta
- 10 oz. frozen, chopped broccoli
- 1 c. chopped tomato
- ¾ c. cooked rice
- ¼ c. chopped onion
- ⅛ tsp. salt
- 1 c. bread cubes
- ¼ c. butter
- water
Steps
- Thaw & drain broccoli.
- Preheat oven to 350° F.
- Cube cheese.
- Melt butter.
- Remove tops & seeds from peppers, parboil for 5-mins., & drain.
- Mix together broccoli, tomato, rice, onion, salt, & all but ½-c. of cheese. Spoon into peppers.
- Toss bread cubes with butter; sprinkle on top of peppers.
- Place peppers in baking dish & bake for 30-mins.
- Sprinkle remaining cheese on top of peppers. Continue baking till cheese is melted.
