Toaster-Oven Meatball Subs with Roasted Broccoli
Ingredients
  • 6 tablespoons panko bread crumbs
  • 1 large egg, lightly beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon table salt, divided
  • 12 ounces 85 percent lean ground beef
  • 12 ounces broccoli crowns
  • 1 tablespoon extra-virgin olive oil, plus extra for drizzling
  • ¼ teaspoon sugar
  • 2 (6-inch) Italian sub rolls, split lengthwise and toasted
  • ⅔ cup marinara sauce
  • 2 thin slices deli provolone cheese (2 ounces)
  • 1 teaspoon lemon juice

  • We prefer to use our Quick Marinara Sauce here; however, you can substitute store-bought marinara sauce. Pre-toasting the sub rolls before adding the meatballs helps to prevent them from becoming soggy.
