Indian Samosa Pie with Minted Yogurt
Ingredients
  • 2 cups (300g) bread and pizza flour (strong flour)
  • 180g cold unsalted butter, cut into pieces
  • 400g potatoes, cut into 1cm pieces
  • 1¼ cup (150g) frozen peas
  • 1½ tbs coconut oil or ghee
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tbs grated ginger
  • 1 long red chilli, seeds removed, chopped
  • 1 tsp Madras curry powder
  • 1 tsp cumin seeds
  • 1 tbs tomato paste
  • 1 tbs mango pickle (from supermarkets)
  • 1 egg
  • 1 tbs caraway seeds
  • 1 tbs nigella seeds
  • subheading: MINTED YOGURT:
  • 200g thick Greek-style yoghurt
  • 1 cup firmly packed mint leaves
  • 1 red (Asian) eschalot, chopped
  • 1 garlic clove, chopped
  • 2 tsp caster sugar
