1 cup Guinness beer (or other dark stout beer)

1-½ cups beef broth or stock

1 medium bay leaf

3 sprigs fresh thyme

1-½ lbs russet potatoes, peeled and cut into 1-in cubes

1 lb carrots, peeled and cut into 1-in chunks

2 tablespoons all-purpose flour

Minced fresh parsley for topping
