  • 1 pound whole milk ricotta cheese
  • 2 large eggs
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried parsley
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 Tablespoon extra virgin olive oil
  • 1 pound frozen organic chopped spinach
  • 8 ounces mushrooms thinly sliced
  • 2 medium cloves garlic crushed
  • pinch salt and pepper
  • 1 pound whole milk mozzarella thinly sliced
  • 1/4 pound grated Locatelli or Pecorino Romano
