High-Protein Udon Noodle Meal-Prep
Ingredients
  • 6 oz dry udon Noodles
  • 7 oz shiitake mushroom (diced)
  • ¼ cup water
  • 4 cups broccolini (diced or sub for broccoli)
  • 2 green onions (scallions) (diced)
  • 3 cups edamame (thawed)
  • 3 tsp black sesame
  • subheading: Tahini Miso Sauce:
  • 2 tbsp tahini
  • 2 tsp miso paste
  • 1 tbsp fresh ginger
  • 1 Medjool date (pitted)
  • 2 tbsp fresh lime juice
  • 2 garlic cloves (peeled)
  • 1 red chili (seeds removed to make it less spicy)
  • 2 tbsp tamari ( reduced-sodium preferred)
  • ½ cup water
