Low-Carb Bacon and Cheese Scones

Ingredients
  • 2 c. Almond flour
  • ¼ c. Coconut flour
  • 1 Tbls baking powder
  • 1tsp dried oregano
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • 1 large egg
  • 1 large egg white
  • ¼ c. Whipping cream
  • 1½ c. Shredded mozzarella- save 2 Tbls for topping
  • ½ c. Cooked bacon -save 1Tbls for topping
  • 3 Tbls chives, chopped -save ½ tsp for topping
Steps
  1. 1. Preheat oven 325.  Line baking sheet with parchment or Silmat
  2. 2. In large bowl, whisk dry ingredients.
  3. 3. In small bowl, whisk egg, egg white, and cream
  4. 4. Drizzle wet mixture over flour mixture and then toss together with rubber spatula
  5. 5. Add cheese, bacon, and chives mixing until well combined
  6. 6. Transfer dough to baking sheet
  7. 7. With hands, work dough into a ball
  8. 8. Press into a neat 8 inch disk and cut into 8 wedges with a knife
  9. 9. Top with reserved bacon, cheese, chives
  10. 10. Bake 20 to 25 minor until lightly golden and cooked through
  11. 11. Remove from oven, allow to cook before serving
