Chocolate Banana Bread
Ingredients
  • 4 over ripe bananas
  • ½ cup almond milk
  • ¼ cup oil
  • ¼ cup sugar
  • 1 vanilla bean pod, scraped
  • 2 cups flour
  • 1.5 tsp baking powder
  • 1.5 cup chocolate chips
Steps
  1. Preheat oven to 180ºC
  2. Line a non-stick loaf tin with baking paper
  3. In a blender, blend the bananas, almond milk, oil, sugar and vanilla bean paste until smooth
  4. In a large bowl, sift the flour, baking powder and add the chopped chocolate
  5. Pour the wet mixture on top of the dry, and fold gently to combine
  6. Spoon into the loaf tin and bake for 35 to 40 minutes, or until a skewer comes out clean
