Granola
Ingredients
  • 4 cups rolled oats
  • 1 ½ cup mixed nuts, like pecans, walnuts and salted pistachios, coarsely chopped
  • 1 cup unsalted raw pumpkin seeds (pepitas)
  • ½ cup maple syrup or honey
  • ½ cup plus 1 tablespoon coconut oil *
  • 2 tablespoons olive oil or vegetable oil
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon allspice
  • ½ teaspoon ground cardamom
  • ½ cup unsweetened coconut chips or shredded coconut
  • ⅓ cup raisins
  • ⅓ cup dried apricots, coarsely chopped
  • ⅓ cup sun-dried cranberries
  •  
  • note: Coconut oil needs to be heated. Zap in a microwave for 1 minute to heat or heat in a small saucepan over low heat to liquefy.
