Cauliflower Carrot Chicken Soup

Ingredients
  • 1 c  chicken or vegetable broth
  • ⅔ c cauliflower
  • 1 medium carrot, chopped
  • ½ cooked chicken breast, diced
  • ¼ tsp turmeric
  • ¼ tsp curry powder or cumin
  • Salt and pepper to taste
Steps
  1. In a medium pot, simmer all ingredients except chicken over medium heat until carrots and cauliflower are cooked and soft.
  2. Using a blender, purée soup ingredients until smooth.
  3. Serve with diced chicken sprinkled on top.
