Stone Fruit Lemon “Ricotta" Toast
Ingredients
  • ¾ cup cashews, soaked in filtered water for 1 hour, then drained
  • 2 Tbsp filtered water
  • 1 tsp agave (or honey)
  • ½ tsp vanilla
  • subheading: pinch sea salt:
  • 1 Meyer lemon, zest + juice
  • 1 stone fruit (pluots, plums, apricots, peaches, nectarines), pitted and sliced
  • 1 bunch thyme, washed, stems removed
  • toast of choice
