How to Make Chinese Fried Rice 炒飯
Ingredients
  • ½ ounce dried shitake mushrooms (5 to 6 medium)
  • ¼ cup oyster sauce
  • 1 tablespoon  soy sauce
  • 3 ½ tablespoons peanut oil or vegetable oil, divided
  • 2 large eggs, beaten lightly
  • 8 ounces small shrimp, peeled and devined
  • 1 cup frozen peas, preferably baby peas, thawed
  • 8 ounces smoked ham, sliced and cut in ½-inch pieces (In the video, we use Cantonese char siu. You can also use lap cheong, or Chinese sausage)
  • 2 medium cloves garlic, minced (about 2 teaspoons)
  • 5 cups cooked white rice, cold, large clumps broken up with fingers
  • 1 cup bean sprouts
  • 5 medium scallions, white and green parts, sliced thin (about ½ cup)
