Ingredients
  • Pork belly - whatever the size
Steps
  1. Dry the skin, score a bit and rub in a bit of salt
  2. Place in a roasting tin and place in the oven for 40 min at 220°C (200° Fan)
  3. Turn down the heat to 130°C (110°C Fan) and roast for a further 3 hours
  4. Turn up the heat to 220°C (200°C fan) for another 15 minutes.
  5. Remove, cover in tin foil and rest for one hour.
