Smashed Potato and Shallot Gratin
Ingredients
  • 2 garlic heads
  • 2 tablespoons olive oil, divided, plus more for drizzling
  • 2 pounds baby potatoes
  • 2 teaspoons kosher salt, divided
  • Freshly ground black pepper, to taste
  • 5 large or 8 small shallots, quartered lengthwise (about 2 cups)
  • 1 small bunch fresh sage (about 15 to 20 leaves), roughly chopped
  • 1 cup light or heavy cream
  • ¾ cup finely grated Parmesan cheese
