Ingredients
  • 800g beef stewing / braising steak cut into large chunks
  • 2 medium onions
  • 2 teaspoons olive oil
  • 4 medium carrots, peeled and sliced into 1cm rounds
  • 400ml Guinness or other stout
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dark brown soft sugar
  • 1 beef stock cube dissolved in 50ml boiling water
  • 2 tablespoons tomato puree
  • 2 bay leaves
  • ½ tsp dried thyme or a few sprigs of fresh thyme (optional)
