  • 1 cup (200g) powdered erythritol
  • ½ teaspoon (2g) salt
  • 1 ½ cups (375mL) heavy whipping cream
  • 2 large egg yolks at room temperature
  • 1 teaspoon (5mL) vanilla extract
  • 3 tablespoons (35g) granulated erythritol
  • ¼ cup (60mL) avocado oil or any oil
  • ⅓ cup (80mL) unsweetened almond milk
  • zest of 1 lemon (optional)
  • ½ cup (50g) blanched almond flour
  • 2 tablespoons (14g) coconut flour
  • 1 teaspoon (4g) baking powder
  • 3 chilled large egg whites
  • 3 tablespoons (35g) granulated sweetener
  • ¼ teaspoon (1g) cream of tartar
  • Bake at 330°F (166°C) for 75 to 90 minutes.
