Sausage, Corn and Poblano Chowder
Ingredients
  • 5 tablespoons unsalted butter, divided
  • 4 fresh sausage links (such as spicy Italian or garlic), casings removed
  • 2 sweet onions, chopped
  • 4 celery stalks, chopped
  • 5 poblano peppers, stem and seeds removed, chopped
  • 4 garlic cloves, minced
  • ⅓ cup all-purpose flour
  • 4 cups chicken broth, homemade or store-bought
  • 1 cup whole milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Cayenne pepper, to taste
  • Kosher salt and freshly ground black pepper, to taste
  • 2 large russet potatoes, peeled and diced
  • 3 cups corn kernels, frozen or drained, if canned
  • ½ cup heavy cream
  • ½ cup chopped fresh chives, plus more for garnish
  • ½ cup chopped fresh cilantro, plus more for garnish
