Natural, Mini Red Velvet Cake (No Food Coloring!)
Ingredients

  • subheading: For the mini red velvet cake:
  • 1 ¾ cup all-purpose flour
  • 2 tablespoons Dutch-process cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup packed dark brown sugar
  • ½ cup granulated sugar
  • ½ cup canola oil
  • ¾ cup buttermilk
  • 2 teaspoons distilled white vinegar
  • 2 large eggs
  • 1 tablespoon vanilla essence (I use vanilla bean paste)
  • 1 large red beet, roasted & pureed- (about ½ cup)
  • subheading: For the cream cheese frosting:
  • 8-ounces block-style cream cheese, softened
  • ½ cup (1 stick) butter, softened
  • 2 ½ cups powdered sugar
  • 1 to 2 teaspoons vanilla essence (I use vanilla bean paste)
