Broccoli Slaw and Chickpea Rice with a Lemon Tahini Dressing
Ingredients
  • 3 cups of cooked Rice, slightly warm
  • 2 cups of Broccoli Slaw roughly chopped
  • 1 can of Chic Peas rinsed and drained
  • ½ cup Cilantro chopped
  • Salt & Pepper to taste
  • subheading: Lemon Tahini Dressing:
  • 2 tbsp of Tahini
  • Juice from 1 Lemon
  • 3 tbsp of good Olive Oil
  • 1 tsp of Vegan Honey or Maple Syrup
  • 2 to 3 tbsp Water to thin as needed
  • Salt & Pepper to taste
