Chicken Meatballs with Alfredo Sauce

Born and raised in New Orleans, Louisiana (known for some of the best food in the world) I have a mixture of personal recipes as well as some favorites I've found along the way.

A rich and comforting dish featuring tender chicken meatballs paired with a creamy spinach Alfredo sauce. Perfect for serving over rice, pasta, or mashed potatoes, or even as a hearty appetizer.

1 lb ground chicken

½ cup ricotta cheese

¼ cup shredded parmesan cheese

½ cup bread crumbs or panko

2 tsp minced garlic

¼ tsp salt

¼ tsp black pepper

1 TBS italian seasoning

subheading: Spinach Alfredo Sauce:

4 TBS butter

2 tsp minced garlic

2 cups heavy cream

1 cup grated parmesan cheese

6 oz fresh spinach thinly sliced

¼ tsp salt (or to taste)

¼ tsp black pepper (or to taste)

subheading: Serve with:

cooked rice, pasta, potatoes, or serve as an appetizer
