  • 10 ounces Canadian bacon, cut into 1 ½-inch pieces
  • 18 large eggs
  • 1 ½ cups milk
  • 1 ½ cups heavy cream
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons kosher salt
  • 1 ½ teaspoons freshly ground black pepper
  • ½ teaspoon sweet paprika

  • 8 large egg yolks
  • 3 tablespoons fresh lemon juice, plus more if needed
  • ¾ pound (3 sticks) salted butter, melted
  • Pinch of cayenne pepper
  • Pinch of ground white pepper
