French toast always feels like a special treat, but it's not hard to make. Turning it into a casserole is even easier, because it bakes in the oven, so you don't have to cook every slice of the stove top
Ingredients
  • 1 1-lb. loaf of crusty whole-grain bread, cut into 1" pieces
  • 1 12-oz. pckg. extra firm silken tofu
  • 4 Medjool dates (pitted)
  • 1 cup unsweetened plant milk
  • 1 cup unsweetened applesauce
  • 2 tsp vanilla extract
  • ¼ cup arrowroot powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp sea salt
  • fresh fruit (berries or banana) for serving, optional
  • Maple syrup for serving, optional
