Mediterranean Braised Green Beans with Potatoes and Basil
Ingredients
  • 3 tablespoons extra-virgin olive oil

  • 1 ½ pounds green beans, trimmed and cut into 2- to 3-inch lengths
  • 1 pound Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 1 tablespoon tomato paste
  • 1 (14.5-ounce) can diced tomatoes drained with juice reserved, chopped coarse
  • 2 teaspoons salt
  • ¼ teaspoon pepper
  • 3 tablespoons chopped fresh basil
  • 2 teaspoons lemon juice
