Black Bean Sandwich
Ingredients
  • 2 slices of whole wheat bread
  • ½ cup mashed beans
  • 1 tablespoon mustard
  • ½ cup lettuce
  • ½ avocado
  • salt and pepper to taste
  • ¼ red onion
  • 1 serrano pepper (optional)
Steps
  1. Spread the mashed beans on one slice of the bread. Spread the mustard on the other slice of bread.
  2. Slice the lettuce and arrange it evenly over the bread with mashed beans.
  3. Slice the avocado onto the lettuce.
  4. Mince the red onion and sprinkle it over the avocado. Optionally, slice the serrano pepper and add it.
  5. Close up the sandwich, wrap in a paper towel, stick it in a resealable plastic bag, and enjoy!
