Baby Back Ribs

Ingredients
  • 1 to 2 slabs baby back ribs, membrane removed
  • Dry seasonings or marinade of your choice
  • 1 cup apple juice
  • ¼ cup apple cider vinegar
  • 1 tbsp liquid smoke
  • BBQ sauce of your choice
Steps
  1. subheading: Dry rub/Marinade:
  2. At least two hours before cooking, remove ribs from packaging and cover in dry rub or marinade of your choice. Wrap or cover in bag or container and place back in refrigerator.  If using pre-seasoned ribs you may skip this step. (See notes)
  3. subheading: Cooking Directions:
  4. Place 1 cup apple juice, ¼ cup apple cidar vinegar and 1 tbsp liquid smoke in Instant Pot. Insert trivet.
  5. Place ribs on top of trivet, rib bones standing up, bending into a 'U' shape. If using two racks of ribs, intertwine the two racks.
  6. Lock on lid, close valve to 'sealing'. Cook on manual high pressure for 26 minutes (1 rack) to 30 minutes (2 racks).
  7. When Instant Pot beeps allow a full natural pressure release of at least 15 minutes.
  8. Your ribs will be fully cooked after the Instant Pot, remove ribs from the Instant Pot onto a tray. Be careful as they will be very tender and may fall apart.
  9. For more traditional ribs, cover with BBQ to desired coverage and grill until sauce is carmelized.  Alternatively, you may place the ribs under the broiler until sauce is carmelized - about 5 to 10 minutes.
Notes
  • If you prefer to pre-season your own ribs you may season your ribs ahead of time, wrap in freezer paper and freeze.  Remove from freezer and allow to thaw before cooking.  Ribs do not need to completely thaw, but they do need to be flexible enough to be bent to fit into the Instant Pot. Partially frozen ribs will take longer to come to pressure, but active cook time should be the same as thawed ribs (26 to 30 minutes)
