Ingredients
  • Turkey Pumpkin Chili
  • 16 oz ground turkey
  • 15 oz can kidney beans, drained
  • = 15 oz great northern beans, drained
  • 1 large onion diced
  • 1 large green pepper, diced
  • 3 cloves garlic, diced
  • 2 15-oz cans fire-roasted diced tomatoes
  • = 16 oz pumpkin purée (I roasted a pumpkin
  • but canned would work just as well, just make
  • sure there is no sugar)
  • 15 oz chicken broth
  • 2 tsp salt in
  • = 1 tsp cumin
  • chili powder, other spices to taste
  • Sautee ground turkey, onion and
  • peppers still turkey is cooked through and
  • onions and peppers are tender. Add garlic and
  • cook a few more minutes. Add everything else
  • and cook over medium heat 30 min or until
  • flavors are combined. I used instapot which
  • worked great.
  • This works out to 8 servings. Each serving has
  • 1 protein for women (2 oz turkey, 3 oz beans)5 ounces veggies
  • Can top with sour cream for fat
