Chili Lime Chicken Slaw
Ingredients
  • 10 oz Chicken Breast
  • 1 bag/14 oz Coleslaw Mix
  • 1 tbsp Red Wine Vinegar
  • 1 tbsp Dijon Mustard
  • 1 tsp Chili powder
  • ΒΌ tsp Ground Ginger
  • Lime Juice
  • Salt, pepper, garlic powder to taste
Steps
  1. Slice your chicken breast into equal sized pieces and season with salt, pepper, and garlic powder. Add to a non-stick skillet over medium-high heat and cook until the outsides are no longer pink. If you slice your chicken bigger, make sure it only needs another 3 to 5 minutes of cooking time before moving on.
  2. Pour a bag of shredded coleslaw mixed vegetables into your pan. Add the red wine vinegar and immediately cover. Allow to steam 3 to 5 minutes depending on your preference for crunch.
  3. Remove the lid and add the mustard, chili powder, ginger, and lime juice. Toss to combine.
