One Pan Mandarin Chicken with Ginger

  • ¼ tsp Ground Cardamom
  • ¼ tsp Ground clove

  • 4 to 5 lb Whole roaster chicken ; spatchcocked*
  • 1 tbsp Olive oil
  • 2 Red onions ; sliced
  • 2 Mandarin Oranges ; sliced
  • 1 cup Fresh Mandarin orange juice ; 6 to 8 oranges
