[Homemade] Pepperoni Pizza with a Garlic Butter Parmesan Crust

  1. Here's my dough recipe. I used Polly o whole milk mozzerella. Dough was 31 oz bread flour, 20 oz water, .15 oz active yeast, .5 oz sugar, .5 oz salt, .4 oz olive oil. Activated the yeast in lukewarm water and the sugar. Mixed the flour and salt into yeast mixture with a dough hook attachment on a kitchen aid stand mixer. Then added olive oil and kneaded on low for 6 minutes. Cut dough into three balls and let rise for 3 days in the fridge. Stretched to 16". Oven was at 550 degrees and cooked for 10 minutes. Sauce was kenjis ny style sauce recipe.
  2. Garlic butter was just 3tbsp butter, 3 garlic cloves, some basil, and oregano. I brushed it on right when it came out of the oven then sprinkled on the parm.
